When we started BIPOC Foodways Alliance, we had a couple of things in mind: combatting racism through food, breaking down cultural barriers, and celebrating women cooks.
As a Black woman chef, I started noticing something over the years: women are the rulers of the home kitchen, and the home kitchen is where the real business of cooking gets done.
What do I mean by this? By “business” I’m not talking about the exchange of money for a plate of food (although women are quite adept at this too). No, what I mean is that women are the holders of true culinary knowledge— the histories, stories, legacies, and emotions that women pass down from generation to generation in their kitchens. The invaluable business of really cooking— of sharing love through a dish that many restaurant menus could not, or possibly should not, showcase.
When we decided to do a collaboration with Project Sweetie Pie, accepting a donation from their bumper crop of collard greens, we knew we wanted to celebrate the ingenuity of women cooks— especially home cooks— with this important cultural ingredient.
We’ve brought together four incredible women who are sharing dishes from their home kitchens and individual cultural backgrounds to bring you an incredible evening of eating:
Jeniffer Kuria (Kenya): Sukuma wiki (“week pusher”) na Ugali: Collard Greens sauteed with onions, tomatoes and Kenyan spices, served with ugali, a stiff cornmeal porridge/ dough
Sina War (Cambodia): Salaw Machu Krueng: Tamarind, lemongrass, and Collard Green soup with braised brisket and Jasmine Rice
Ekta Prakash (India): Chicken Saagwala: North Indian chicken cooked in greens and spinach sauce with ghee, ginger, and Indian spices served over pulao– Basmati rice with dried fruit and Indian spices
Lutunji Abram (African American): Vegan Collard Greens Salad with Spiced Seitan
